In Season 2, Episode 24, Rachel dons a terrible hot-pink bridesmaid dress and flashes back to the 8th grade when she had to sing “Copacabana” in front of the whole school.
So naturally, we made a cocktail inspired by that.
We wanted to do a take on a Pink Squirrel — a Pepto Bismol-pink cocktail that has amaretto as one of its ingredients. But we wanted a tropical twist, to tie in the “Copacabana” theme. So we thought — coconut!
Everything was set up and ready to go. And then fate had other plans.
The thing is, Chambord — the raspberry liqueur we were using to make the drink pink — isn’t actually red. Or pink. It’s sort of a deep crimson-brown color. That, combined with the Disaronno and ample amounts of coconut ice cream made for a very … not-pink drink.
So, we had to PIVOT!
We’re going to tinker around with this recipe a bit more, but for now, we can tell you that at least this TASTES good, even though it’s the wrong color.
1/2 - 1-inch off the top of a pint of coconut ice cream
1 ounce Chambord (raspberry liqueur)
1/2 ounce Disaronno (amaretto liqueur)
2 ounces coconut rum
Combine everything in a blender and blend it up real nice. Serve topped with whipped cream to make it even more decadent!
